Cool Summer Pea Salad
Pea Salad is light and cool and is awesome on a hot day when you don’t want to eat anything heavy. Pea Salad is also easy and quick and on who doesn’t love easy and quick when it comes to homemade food? This can be made ahead and kept in the refrigerator until you are ready to serve this amazing dish.
This recipe is a hit with my husband and my sons. I never would have thought that but they love it and I can’t keep any in my house for more than one day. This is supposed to be a side dish but sometimes it turns into a meal.
Now, with any recipe, you can make this your own. I have seen different types of onions or eggs added and that’s wonderful. Think about what you family likes or dislikes and make it where everyone will want to eat pea salad.

Easy, cool pea salad
Ingredients
1 16 ounce bag of frozen peas – completely thawed
4 strips of bacon – cooked and ready to crumble
1 medium onion – finely diced
1 cup of cheddar cheese
1/2 cup of Duke’s Mayonnaise
1 teaspoon of salt
1/2 teaspoon of pepper
Instructions
In a large bowl, combine the peas, the onion, the cheddar cheese and the mayonnaise.
Mix well.
Add salt and pepper.
Crumble bacon on top and serve.
Notes
This dish is best served cold. Try to refrigerate at least two hours before serving.
